I love the simplicity of this recipe, using little ingredients for a giant taste!
I thought this would be a little sophisticated for my 2 year old, but he absolutely loved it and gobbled it down so fast!
This is such a simple cheesecake recipe, you could double the ingredients to make a cheesecake for the family or simply add it into more pots!
The blackberries make this cheesecake different and it’s a nice change from having a lemon or strawberry cheesecake!
The weetabix makes you think you’re indulging into a digestive as it gives a little crunch on top of the cheesecake, but it is actually just a breakfast cereal.
I love the way this cheesecake looks! Layered with delicious ingredients that all complement each other so well!

Ingredient information
Greek yogurt - The favourite ingredient of my son! A great base for this cheesecake!
Cream cheese - I find myself using cream cheese a lot in recipes for my son, I like that I have used cream cheese in a dessert!
Double cream - the reason I have used the extra thick double cream is because this speeds up the whole process! It means you do not have to whip up the double cream!
Blackberries - so sweet and colourful! You could use any berry of your choice, if blackberries aren’t your thing!
Wheat bisk - I love the fact these can be used in so many recipes, not just a breakfast with milk! Packed with iron too!
Serving suggestion
If you wanted to serve this with more blackberries or even a little more cream you could! But this dessert is perfect on its own!
Storage instructions
If you are making this ahead of time to store in the fridge, I would personally leave the Weetabix out and just sprinkle the Weetabix on top when you are ready to eat if you want some crunch! If you don’t mind not having any crunch, you can make this as per the recipe and store in the fridge for up to 2 days!
Recipe | Layered Blackberry Cheesecake
Makes 2-4 cheesecakes
4 tablespoons Greek yogurt
2 tablespoons cream cheese
3 tablespoons extra thick double cream
8 blackberries, mashed
1 wheat bisk, crushed
Instructions
Grab a jar or bowl, and set aside!
Start by mixing the cream, yogurt and cream cheese together in a bowl until smooth.
Start layering the cheesecake by using 2 teaspoons blackberries and placing in a jar or bowl.
Then go in with 1 tablespoon of the cheesecake mixture.
Then a sprinkling of the wheat biscuit.
Layer again the same way and you have your yummy dessert.

Recipe notes
If you wanted to make this recipe vegan/dairy free, all you will need to do is swap the yogurt and cream for a dairy free option! Elmlea do a good plant based cream! To make the recipe gluten free you could leave the Weetabix out or sprinkle with some flaxseed!
