    I find baking/roasting veggies in herbs and spices my son seems to give it a try more often, making them a big hit!

    Ingredient information

    Courgette - I love to use courgettes in recipes, they are so versatile and yummy! They love to soak up flavour, and are speedy to cook with!

    Ground almonds - If you don’t have ground almonds in your cupboard you need to get some! They work so well in sweet and savoury fishes.

    Sumac - I love this spice! It’s so subtle, not spicy so perfect to use for your baby and kids.

    Olive oil - I have used olive oil but you can use avocado oil!

    Serving suggestion

    These can be eaten as a yummy veggie snack, or can be substituted for potato fries and served alongside some fish, alongside a sandwich lunch, or with a main meal such as cottage pie or Mac n cheese!

    Storage instructions

    The courgette fries can be frozen for up to 3 months in the freezer as part of your freezer stash, however they are best eaten straight away cooled down of course! The fries can be kept in the fridge for up to 3 days, in an airtight container!

    To defrost, leave in the fridge overnight until fully thawed.

    To reheat, place in a preheated oven from frozen on 180C/350F for 10-15 minutes.

    Once thawed and cooked the fries will not be able to be re-frozen.

    Equipment Used To Help With This Recipe

    Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Makes 16 fries

    • 1 medium courgette

    • 1 teaspoon ground almonds

    • 1 teaspoon Sumac

    • 1 teaspoon olive oil or coconut oil

    Instructions

    1. Pre heat the oven to 180C or 350F degrees. Prepare a baking tray with parchment paper.

    2. Remove both ends of the courgette, Chop the courgette into 16 wedges or thin strips.

    3. Pop the courgette wedges into a large bowl and add the ground almonds, Sumac and olive oil and mix using your hands or a spoon.

    4. Lay the courgette wedges onto the lined baking sheet in a single layer.

    5. Pop in the oven for 25 minutes, until golden brown.

    6. Serve at room temperature for babies.

    Recipe notes

    If you didn’t want to use the ground nut and spice you could just roast them In some olive oil, black pepper, Italian seasoning and garlic powder!

    I would highly recommend the recipe though and experiment with some spices!
