I find the Richmond meat free sausages the best for meat free! They work so well within this recipe too, and you cannot tell that it is not meat you’re eating. The pastry I use is in this recipe is the Just Roll puff pastry. This pastry is also vegan so very versatile if you’re dairy-free.
I like to keep recipes as simple as I can, that taste great. As a busy Mum, I don’t have the time to be spending hours on a meal. And this is why I like to make these sausage rolls every so often.
The sausage rolls can be served on their own, or as part of a Sunday roast if you are vegan, and looking for a vegan option on a Sunday that is not meat, for those in the family following plant-based diets.
This is why these are perfect for a lunch, part of a dinner or a snack! And they are perfect for on the go, as part of a lunchbox for your fussy eater.

Ingredient information
Richmond meat free sausage - I like these sausages as a meat-free alternative. If you haven’t tried than I would highly recommend.
Small onion - You only need a small onion as I’m using half of the packet. If you needed to use the whole pastry sheet I’d use a medium to large onion.
Olive oil - You can use unsalted butter instead of olive oil if you prefer.
Apricots - So tasty in savoury recipes and they match so well with the sausages and sage.
Sage - One of my favourite herbs, and so tasty as part of a sausage roll treat.
Black pepper - Just the pepper and no salt.
Oat milk - You can egg wash if you didn’t mind this recipe not being vegan, if you were having a meat-free meal day.
Puff pastry - As mentioned, I have used the Just Roll puff pastry which is vegan.
Sesame seeds - The nuttiness texture I love on top of the sausage rolls, and it’s a nice looking garnish too!
Serving suggestion
The sausage rolls can be served on their own as a snack, as part of a lunch alongside crudités such as cucumber and red pepper or as part of a dinner, alongside sautéed potatoes and broccoli with an apricot dipping sauce.

Storage instructions
These vegetarian sausage rolls can be kept in the fridge for up to 3 days, it is best to store in an airtight container for freshness.
You can freeze the sausage rolls for up to 3 months, in a freezer bag or an airtight container. Make sure you label the box or freezer bag with the item and date of freeze.
To defrost the sausage rolls, store in an airtight container or the freezer bag they were frozen in overnight. Once thawed they can be served at room temperature to your baby.
To reheat the sausage roll, place in a preheated oven at 180C or 350F for 5-8 minutes until heated through.
Once reheated the sausage rolls will not be able to be re frozen.
Equipment Used To Help With This Recipe

Makes 8 rolls
2 meat free sausages (I used Richmond sausages)
1 small onion, diced
1 tablespoon olive oil
6 dried apricots, diced
1/2 teaspoon sage
A grind of black pepper
Oat Milk for a milk wash
187.5g ready rolled puff pastry (1/2 a pack) (GF)
sprinkling of sesame seeds (optional)
Instructions
Pre heat your oven to a medium heat to 180C or 350F. Prepare a baking tray with parchment paper.
Fry the onion in the olive oil for 10 minutes, on a low heat, the onions should be cooked and translucent, just about to brown.
Skin the sausages and place in a large bowl. Discard the skin.
Add the cooked onion, sage, black pepper and apricots to the sausages.
Use your hands to bind together, or you could use a food processor.
Lay the pastry on a flat surface, and place the sausage meat along the edge nearest to you.
Once the sausage meat is in place, fold over the other side of the pastry to meet the side nearest to you.
Shape the sausage roll using your hands, and then use a fork to bind all the open edges of the sausage roll together.
Milk wash the sausage roll, and sprinkle with sesame seeds. Using a sharp knife, cut the sausage roll into 8 pieces and place on the prepared baking tray. You do not have to cut the rolls before they are cooked. It is up to you if you wanted to make large sausage rolls or mini sausage rolls as you cut.
Bake in the oven for 25 minutes until golden brown.

If you wanted to make these meaty, you could use chicken or Turkey sausages the recipe would be great with either of those! You could omit the dried sage and swap for oregano, if you didn’t have sage.
