    Ingredient information

    Olive oil - I have used olive oil but you can use an unsalted butter that is dairy free/vegan or dairy, whatever your baby can have.

    Potatoes - You can use any white potato or red potatoes that you have that fits the weight for this creamy soup. You could use a potato masher if you wanted to if you did not mind a lumpy texture rather than a creamy texture.

    Stock cube - I have used a zero salt vegetable stock cube for this simple recipe, you can use a low salt variety too.

    Onion - I have used a yellow onion but you can use a red onion, green onions or shallots.

    Serving suggestion

    The creamy potato soup would be great served with a wholemeal bread spread with unsalted butter, cut into fingers. A mild garlic bread would be a nice idea to serve with the the soup too.

    You could also serve this simple recipe with a dollop of mashed potato in the centre of the soup with a drizzle of double cream and a sprinkle of cheddar cheese. All are great options so try and let me know what your little one thinks.

    Storage instructions

    The 4-ingredient potato soup recipe can be stored in the fridge for up to 3 days, stored in an airtight container.

    If you wanted to freeze the easy potato soup recipe, you will need to make sure that the soup has cooled down before transferring to either a freezer bag (carefully) or airtight container. Ensure that the bag and airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the soup, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.

    To reheat, place the defrosted soup in a saucepan and reheat on a medium heat for 15 minutes.

    Once the soup has been defrosted you will not be able to reheat or re freeze.

    Equipment used to help with this recipe

    Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.

    Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    This is a delicious 4 ingredient recipe that is perfect for the winter months. A great recipe for the whole family.

    Ingredients

    Instructions

    1. Heat the olive oil in a large pot on a medium-high heat, add the diced onion and cook, covered for 10 minutes until soft.
    2. Add the stock cube to the onions with 500ml hot water, stir together and add in the potato chunks.
    3. Cover and cook the potatoes on a medium to low heat for 15-20 minutes.
    4. Once the potatoes are cooked and soft, use a food processor or Nutri bullet and blitz until smooth.
    5. Leave to cool before serving to your baby. You could finish with a little black pepper if you like.

    Notes

    Feel free to add in other veggie such as peas or broccoli, this is a great basic recipe if you needed to use up veggies you have leftover.

    Instead of using olive oil you could use an unsalted butter for this easy recipe, this would not make the recipe vegan or dairy free though.

    To finish the homemade potato soup you can pour in a little whole milk to make the soup even creamier and smooth soup. If your little one is dairy free you can use any type of milk that is dairy free, Oat milk works well for this ultimate comfort food.
