Ingredient information
Head of cauliflower - A versatile vegetable that can be used within so many recipes, great if your family are following a plant based diet.
Cherry tomatoes - These are great to have in the fridge and great for sauces. Check out my ‘Easy Tomato sauce’ recipe that uses cherry tomatoes as the main ingredient.
Olive oil - You could use avocado oil or vegetable oil as alternative options.
Garlic powder - You could use 1 clove of crushed garlic instead if you have this. I like to use garlic powder as this is a great staple to have in the fridge. You could in addition or instead of garlic powder use onion powder too.
Ground ginger - You could use a thumb sized piece of ginger grated using a lemon zester. Ground ginger is another great staple to have in the fridge.
Curry powder - I have used a medium curry powder, which works perfectly.
Black pepper - I always season with some black pepper and never with salt.
Serving suggestion
The baked cauliflower is great served with basmati rice and a dal, or it can be served in its own, as a stand alone meal.
You could easily blend this up to make a purée if you wanted to make a smooth purée for your baby.
You could also mash this too, as this the cauliflower and vegetables are easily mashable. This is a great versatile recipe!
You could add the roasted cauliflower to a loaded baked potato too as a delicious meal. A great way to enjoy a baked potato.

Storage instructions
The baked cauliflower can be stored in airtight containers, portioned into small containers or in a large airtight container. Then it can be stored in the fridge for up to 3 days.
Alternatively you can store in airtight containers, and store in the freezer for up to 3 months. I like to store in small airtight containers so that it is pre-portioned, so it’s easily defrosted when I need it.
To defrost the cauliflower, leave in an airtight container in the fridge overnight to fully defrost.
To reheat, you can heat on the hob for 5 minutes or so n a medium heat.
Equipment used to help with this recipe
I have used a very useful pie dish to make this cauliflower bake, it has so many uses not just for pies! It’s a very good oven dish too!
I also use small airlock containers to portion and store in the fridge or freezer. Or you can use a large airlock container with the click shut lids. Dishwasher and freezer safe and BPA free, so very suitable for food use.

Ingredients
Makes 4 portions
1 medium whole cauliflower, cut into florets
1 250g cherry tomatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1 teaspoon mild curry powder
1 teaspoon pepper (black or white)
Instructions
Preheat the oven to 180C or 350 degrees F.
Pop the cauliflower florets, tomatoes, olive oil, garlic powder, ginger and black pepper into a baking dish or casserole dish and mix together using your hands or a spoon. Place the dish on a baking sheet.
Add in a splash of boiling water .
Pop into the oven for 45-50 minutes until the cauliflower is soft and cooked through.

The baked cauliflower is deliciously vegan friendly, you could add chicken or a plant based protein if you wish.
You can serve with a dal or as part of your main meal.
You could add panko breadcrumbs to the fresh cauliflower before you pop in the oven to add a crunch to the recipe.
