    Eggs are so nutritious and healthy for our little ones. So versatile and so tasty. From weaning to older kids, they are sure to be a staple in your household, for the whole family. And great for those busy mornings or busy days.

    I’m all about ease with cooking and I hope that this recipe is no different. The egg bites are so quick and an easy recipe to make and bake, perfect for those little foodies or those picky eaters!

    Including simple ingredients with eggs in a baby-led weaning (BLW) diet offers a multitude of benefits for little ones venturing into solid foods.

    The Benefits Of Eggs For BLW

    Eggs are a rich source of high-quality protein, essential vitamins, and minerals that support healthy growth and development. Introducing eggs during BLW allows babies to explore different textures and tastes while nourishing their bodies.

    It is important to remember that, according to current guidelines, eggs can be safely introduced to babies between 6-8 months of age, UK standards are that eggs must have the red lion stamp to be able to serve from 6 months of age.

    Egg and cheese is a match made in heaven. So I had to combine two varieties. I have used mozzarella and mature Cheddar cheese. So delicious and tasty.

    Using Frozen Veggies For BLW

    I have used some frozen vegetables here, as I always have some frozen veg in the freezer. I have used the mixed veg to give some variety and colour. Introducing solid foods to babies is an exciting milestone both for parents and little ones alike.

    It also provides essential vitamins, such as vitamin B12, which supports brain development. The texture of cheddar cheese is usually soft enough for babies to handle, making it suitable for them to grasp and manipulate during their self-feeding journey.

    However, it is crucial to ensure that the cheddar cheese is cut into appropriate sizes to prevent choking hazards. Babies should always be supervised closely while they are exploring new foods, including cheddar cheese, to ensure their safety.

    I would highly suggest that you purchase some silicone cups for this recipe, they will just pop out of the cups without it any greasing. If you choose not to use the silicone cups, you will need to grease the muffin tin with olive oil or unsalted butter.

    I have used paper cups for this recipe, however for whatever reason the egg stuck to the cups so greasing or the silicone cups would be best.

    The egg cups are great for lunch or as a delicious afternoon snack!

    Ingredient information

    Mixed frozen vegetables - If you do not have a bag of mixed veg in your freezer then you need to get some! So good to have some vegetables ready to go. You could add a touch of garlic powder with the vegetables if you wish.

    Black pepper - Delicious with the eggs, no salt needed.

    4 free range eggs - Free range eggs are good if you can get them! Only 4 needed for 6 egg cups.

    Mozzarella - Delicious and creamy, works so well with the eggs.

    Mature cheddar cheese - Tangy and creamy, eggs and cheddar cheese always works, and are great options for weaning.

    Serving suggestion

    These can be served on their own, or as part of a lunch, a quick breakfast recipe or even as a nutritious snack.

    You can serve these with some toast fingers, a side of fruit, mango pot or potato smiles.

    Storage instructions

    You can store the egg cups in airtight containers for up to 3 days in the fridge.

    If you wanted to freeze the egg cups you can for up to 3 months in the freezer in airtight containers or freezer bags. Make sure before you freeze that the egg cups are completely cooled down before you pop into the airtight container or freezer bag. The egg cups will now be safe to pop in the freezer. I label the freezer bag with the date and what is in the bag for ease when storing. If using an airtight container, I write on some masking tape, so you can reuse the airtight container.

    When you defrost the egg cups, leave the egg cups in the airtight container or freezer bag and leave to thaw in the fridge overnight. They are best eaten cold from the fridge and eaten on that day.

    Equipment Used To Help With This Recipe

    Silicone cups - I love reusable kitchen stuff! These muffin cups are dishwasher and freezer safe and can be used in the oven up to 230 degrees C! Ideal for individual baby portions.

    Muffin tray - A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.

    Pyrex jug - A measuring jug is a must-have kitchen utensil and I like the glass Pyrex jugs hygiene and ease of cleaning. The measuring markers are easily readable too.

    Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.

    Air-tight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Recipe | Egg Veggie Bites With Cheese For Baby Led Weaning

    Makes 6 egg cups

    • 12 teaspoons mixed frozen vegetables

    • Black pepper

    • 4 free range eggs

    • Half a ball of mozzarella (100g) cut into 6 cubes

    • 2 tablespoons grated mature cheddar cheese

    Instructions

    1. Pre heat your oven to 180C or 350F.

    2. Cook the vegetables in some hot water in a saucepan for 10 minutes, or as per packet instructions.

    3. Prepare your muffin tin with the silicone cups.

    4. Whisk the 4 eggs in a Pyrex jug and set aside.

    5. Once the vegetables are cooked, place 2 teaspoons in each silicone cup.

    6. Next, pour egg mixture to fill the cups equally.

    7. Put a piece of the mozzarella into the egg mixture, and push down using your fingers.

    8. Sprinkle each cup with the cheese and pop in the oven for 25 minutes.

    Recipe notes

    You don’t have to add the cheese in this recipe, works just as well without. If you wanted to substitute the cheese for different cheeses you can as well.

    Just bare in mind if you have young babies under 12 months don’t use any creamy unpasteurised cheeses.
