When selecting the best peanut butter for babies, it is essential to choose options that are smooth, natural, and free from added sugars or salt. Look for brands that use only ground peanuts, ensuring that no artificial ingredients interfere with your little one’s health.
By introducing nut butters around six months of age, you can help reduce the risk of allergies, but always consult with a health visitor first if you’re worried.

Ingredient information
Chicken - I have used skinless chicken breasts but boneless skinless chicken thigh fillets would be great too. Great for slow cooker meals. Chicken thighs can give so much flavour if you have not tried them.
Onion - You can use any onion that you may have such as shallots or a red or yellow onion.
Garlic - If you do not have fresh garlic you could use garlic granules or garlic powder. Garlic pepper is a great one to use too.
Red pepper - I have used a red pepper but a green pepper or yellow pepper is good to use too.
Ginger - You could use ground ginger or fresh ginger grated.
Curry powder - I have used a no added salt curry powder, but you can use your mild curry powder of choice.
Paprika - I have used a touch of paprika for a depth of flavour which works really well within the tasty sauce.
Peanut butter - Be sure to use a smooth peanut butter that is 100% nuts if possible. Makes for a great peanut sauce. Crunchy peanut butter could be a choking hazard.
Coconut milk - Use a full fat coconut milk especially if your little one is 0-2. You can use light coconut milk if that is all you have for the coconut sauce.
Rice vinegar - A little rice vinegar really adds an acidity to the recipe that is needed for a flavourful sauce.
Black pepper - I have added a little black pepper for seasoning without the salt.
Lime - Lime juice is optional, but if you did have it, it makes for the finishing touch to the recipe. You could also add a little fish sauce too if you prefer for an added flavour.
Serving suggestion
The chicken satay would be great served with white rice, jasmine rice or brown rice. You could even serve with egg noodles or pad thai noodles/rice noodles.
You can also serve with green beans or broccoli florets with this easy recipe, an easy baby led weaning finger food.

Storage instructions
The slow cooker chicken satay curry can be stored in the fridge for up to 3 days, stored in an airtight container.
If you wanted to freeze the chicken satay sauce, you will need to make sure that the chicken satay has cooled down before transferring to either a freezer bag (carefully) or airtight container.
Ensure that the bag and airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the thai peanut chicken, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.
To reheat, place the defrosted chicken satay in a saucepan and reheat on a medium heat for 15 minutes.
Equipment used to help with this recipe
Slow cooker - A slow cooker is well worth the investment. I use one that has a non-stick removable pan for ease of cleaning, and an in-built timer.
Slow cooker liners - Food safe liners, disposable and BPA free - these are a great idea for lining the slow cooker pot.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

- Line your slow cooker with a slow cooker liner if using.
- Place all of the ingredients into the slow cooker. Give everything a good stir.
- Turn the slow cooker on for 3-4 hours on high and 6-8 hours on low.
- Squeeze a little lime before serving (optional). Serve with fluffy rice.
