    The fruit salad I have included all of my son’s favourite fruits, but you can of course mix this up to your little one’s favourites.

    Ingredient information

    Wholemeal bread - I have used whole meal but you can use white sliced bread if you prefer.

    Tomato purée - So good if you want a quick pizza sauce base.

    Oregano - I have used oregano but you can use mixed herbs or Italian seasoning if you have it!

    Cheddar cheese - I have used mature cheddar cheese, but you can use grated mozzarella or your cheese of choice.

    Olive oil - A great substitute for olive oil is avocado oil.

    Black pepper - I like to use black pepper to season without the salt.

    Potato - I have used a white potato, you can use whichever potato you have, it will work the same.

    Kiwi - Rich in vitamin C, and one of my son’s favourite fruits.

    Blueberry - Packed full of anti oxidants a super, superfood.

    Strawberry - Vitamin C packed as well.

    Raspberry - Packed full of anti oxidants.

    Red grape - Quartered are perfect from 6 months of age.

    Serving suggestion

    This can be served on its own as all the elements work so well together to make a yummy sandwich lunch. Definitely a favourite in this home.

    Storage instructions

    The toastie can be stored in the fridge for up to 3 days, if stored in an airtight container. The potato crisps can be stored in an airtight container for up to 5 days.

    If you wanted to freeze the the toastie, you will need to get yourself a freezer bag or an airtight container. Make sure that which ever you choose are labelled with the item and the date. I use masking tape to label the airtight container. The toastie will store in the freezer for up to 3 months.

    To defrost the toastie, leave in the fridge overnight to defrost and make sure it is fully defrosted, before serving.

    Once the oat bars have been defrosted you will not be able to reheat.

    Recipe | Easy Pizza Toastie - With Homemade Potato Chips

    Makes 1 bento box for little tummies

    • 2 slices of whole meal bread, crusts removed

    • 1 tablespoon tomato purée

    • 1/2 teaspoon oregano

    • 2 tablespoons cheddar cheese, grated

    • 1 tablespoon olive oil

    • A grind of black pepper

    • 1 small potato, thinly sliced

    • 1/2 kiwi, diced

    • 8 blueberries

    • 1 strawberry, quartered

    • 1 raspberry

    • 2 red grapes, quartered

    Instructions

    1. Start by preheating the oven to 180 or 350F.

    2. Clean the potato and slice thinly, place in a medium bowl and mix with the olive oil and black pepper.

    3. Place the potato pieces on a lined baking sheet and pop into the oven for 30 minutes. Once cooked take out of the oven to cool.

    4. Place the pieces of bread on a work surface with the crusts removed.

    5. Place the tomato purée on one half of the bread and spread out in the middle, missing the edges!

    6. Sprinkle over the oregano and cheddar cheese.

    7. Place the other piece of bread on top of the other. Using a fork press down firmly around the edges of the bread, until it is firmly sealed.

    8. Pop inside the toaster for 1-2 minutes until golden brown and the cheese just begins to melt.

    9. Cut the toastie down the middle in half and place in the bento box.

    10. Place your fruit pieces inside a silicone cup and place in the bento box.

    11. Place the potato crisps in the bento box.

    Recipe notes

    If you wanted to add in some veggies or protein to the toastie, you could add some chicken or some grated courgette or carrot.

    You could use mozzarella cheese instead of cheddar cheese for a quick lunch.

    The recipe works with pizza dough too, but you will need to pop into the oven with the potato crisps for 10 minutes.
