Flour - I have used plain flour but you can use self raising flour or oat flour if you prefer.
Milk - I have used whole milk, but you could use semi skimmed milk or a plant based alternative such as almond milk.
Cinnamon - I have used a little cinnamon, but you could leave this step out.
Fruit puree - I have used a fruit pouch for convenience but you could use an fresh apple puree if you like.
Egg - I have used a medium free range egg.
Unsalted butter - I have used unsalted butter but you could use olive oil, avocado oil or coconut oil.
Serving suggestion
The healthy pancakes would be great served with berries such as strawberries and blueberries with a plain Greek yogurt.
You could spread the pancakes with smooth peanut butter and cut into fingers for a great finger food option.

Storage instructions
If you do not need to cook all of the fluffy pancakes at once, you can freeze the leftover batter. You can store this way for up to 3 months in the freezer.

This way you can pop them out of the freezer when you need them. You can cook them straight from frozen in the pan, or you can defrost thoroughly and then cook as per cooking instructions.
The rest of the pancakes can be stored for up to 2 days in the fridge in an air-tight container or freezer bag.

Pyrex jug - A measuring jug is a must-have kitchen utensil and I like the glass Pyrex jugs hygiene and ease of cleaning. The measuring markers are easily readable too.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

- Pop all the ingredients into a mixing bowl and whisk with a fork or whisk until you get a smooth batter. You can blitz in a food processor too if you like.
- Pop some of the unsalted butter into a frying pan on a medium heat. Once you have melted butter, pour in the pancake batter. You can choose the sizes of your pancake, I made mine quite big.
- Leave to cook for 3 minutes until golden brown, you should see lots of bubbles forming in the batter, flip over and cook for 2-3 minutes on the other side.
- Repeat until you have used up all of your batter.
- Leave to cool before serving to your baby.
