    The muffins are a great quick healthy breakfast for that busy morning time, they do not just have to be for a snack, they make for an easy breakfast.

    Frozen Fruit For Teething Baby

    Frozen fruit can be an excellent choice for teething babies for several reasons. Firstly, the cold temperature helps to soothe sore gums and alleviate discomfort associated with teething. The sensation of cold can provide immediate relief, making it easier for your little one to cope with the challenges of this phase.

    Ingredient information

    Oats - Quick oats blitzed to oat flour is a great alternative to all purpose flour. Oats also give a sweet taste to recipes that is enjoyed by babies and toddlers.

    Egg - I have used a medium egg for this recipe.

    Flaxseed - I have added in flaxseed for added nutrition, you can leave this ingredient out if you prefer.

    Banana - The added banana has been added to add sweetness and flavour to the muffins.

    Milk - I have used whole milk, but you can use a plant-based milk such as almond milk.

    Baking powder - I have used baking powder as a raising agent for the muffins.

    Frozen berries - I have used frozen blueberries and raspberries for this recipe which i think works really well within the recipe. You can use fresh berries too if you do not have frozen.

    Serving suggestion

    The easy muffin recipe would be great served with plain Greek yogurt. You could cut the muffins in half and spread with a little almond butter.

    The homemade muffins are just a great afternoon snack on their own.

    Storage instructions

    Store the blueberry oatmeal muffins in an airtight container in the fridge for up to 5 days.

    The fluffy muffins can be frozen (once cooled to room temperature) in an airtight container or in a freezer bag for up to 3 months. Be sure to label the freezer bags with the item and date, so it is clear how long they can be stored.

    To label the airtight container I use masking tape this way it will not ruin the airtight container.

    To defrost the muffins, keep them in an airtight container and defrost in the fridge overnight. Make sure they are fully defrosted before serving.

    Once defrosted they can be kept in the fridge in a container for up to 3 days.


    Equipment used to help with this recipe

    Muffin pan - A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Muffin cups - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C! Ideal for individual baby portions.

    Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

    These are a great after school snack or healthy breakfast option for baby led weaning and for your toddler.

    Ingredients

    Instructions

    1. Preheat your oven to 180C or 350F. Prepare your muffin tin with silicone or paper liners and set aside.
    2. Pop all the ingredients into a medium bowl and mix together using a spatula or a spoon.
    3. Spoon approx 2 tablespoons on the muffin batter into each muffin cup.
    4. Place into the preheated oven. The baking time is 25 minutes until golden brown.
    5. Leave to cool on a wire rack.

    Notes

    The oaty muffins can easily be made gluten free, all you will need to do is use gluten free oats or you can even use almond flour if you like for nut free babies.

    You can use other frozen fruit too if you like, such as strawberries and blackberries.

    You can use a plant based milk such as oat milk to make the recipe dairy free.

    You can also add a tsp cinnamon if you wanted to and sprinkle a little cinnamon on the tops of the muffins before they go into the oven.
