This broccoli fritter for baby recipe is an excellent choice for baby led weaning, as they require minimal simple ingredients: just fresh broccoli, cheddar cheese, and egg. A great way to try a broccoli finger food for the first time.

Ingredient information
Broccoli - Broccoli is a great vegetable to start weaning with. This is a simple yet yummy recipe using broccoli as the main ingredient. Great if you have any leftover broccoli to use up.
Cheese - I have used a mature cheddar cheese for this recipe, you can use a mild cheddar or Red Leicester, mozzarella cheese or double Gloucester cheese. As long as the cheese you are using is pasteurised.
Egg - I have used 1 free range egg for this recipe. This brings all the ingredients together making the fritter stick together.
Olive oil - I have used extra virgin olive oil, you can use unsalted butter too if you prefer.
Greek yogurt - I have used full fat Greek yogurt for the base of the dip for the fritters. This is optional for the recipe and you can just serve the fritters as they are on their own.
Lemon - I have used a little fresh lemon juice for the yogurt dip.
Serving suggestion
The broccoli cheddar fritters would be great served with a lemon yogurt dip, see below how to make it is so simple and nutritious at the same time.
You can also serve the veggie fritters alongside shredded grilled chicken breast at added protein to the meal.

Storage instructions
The fritters once cooled, can be stored in the fridge in an airtight container for up to 3 days. If you wanted to reheat the fritters, you will only be able to reheat once from the fridge.
I would suggest heating them up in the oven on a baking sheet, at 180 degrees, for 15 minutes. Leave to cool before serving to your baby.
To store in the freezer, leave the fritters to cool and store in an airtight container or in an airtight freezer bag. They can be kept in the freezer for up to 3 months.

Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

- Start by placing the broccoli into a large bowl and mash using a fork.
- Add the beaten egg and grated cheese to the broccoli and mix together until combined.
- Next, take your frying pan and heat 1 teaspoon of the olive oil.
- Spoon 2 tablespoons into the frying pan making 2 fritters and cook for 2-3 minutes and flip over and cook for a further 2-3 minutes on a medium heat until golden brown.
- Repeat until you have used up all of the mixture.
- To make the yogurt dip, spoon the Greek yogurt into a small bowl and add the lemon juice. Mix together until combined. This is your yogurt dip. (completely optional).
Notes
You can make the broccoli recipe dairy free by choosing a dairy free cheddar cheese for the recipe.
You can use cauliflower or a combination of cauliflower and broccoli for this recipe as an alternative ingredient.
You can try making a flax egg for vegan babies, (3 tablespoons flaxseed mixed with 3 tablespoons water and leave to sit for 5 minutes and this is your “egg”).
