    There are different ways you can cook the potato to create different textures. You can steam or bake the potato wedges until they are tender.

    Ingredient information

    Baking potato - I have used a baking potato as these are what I always have in, but you could use any medium sized potato that you have.

    I find baking potatoes bake best in the oven. Potatoes are a great source of fibre too.

    Olive oil - I have used olive oil, but alternative oils you could use with healthy fats and essential nutrients are avocado oil or coconut oil.

    Garlic granules - Seasonings for potato wedges, well you can leave this ingredient out if you prefer, especially if this is a first food for your little one. A little garlic creates a delicious flavour to the wedges.

    Black pepper - A little seasoning of black pepper goes a long way, try not to use salt from 6 months old, this should be at a minimum from 6 months old.

    It is best not to use any salt in cooking until about 12 months old.

    Cornflour - This step can be left out too. The cornflour (cornstarch) leaves a lovely texture to the wedges.

    Serving suggestion

    The roasted potato wedges would be great served as a great side for the whole family served with a homemade tomato ketchup, chicken meatballs or with a black bean burger.

    Storage instructions

    This easy recipe once cooled, can be stored in the fridge in an airtight container for up to 3 days.

    If you wanted to reheat the oven potato wedges, you will only be able to reheat once from the fridge.

    I would suggest heating them up in the oven, at 180C or 350F, for 10-15 minutes. Leave to cool before serving to your baby.

    To store in the freezer, leave the wedges to cool at room temperature and store in an air-tight container or in an airtight freezer bag.

    They can be kept in the freezer for up to 3 months.

    To defrost the wedges, leave in the fridge overnight to fully thaw.

    Once thawed and reheated you will not be able to re-freeze.


    Equipment used to help with this recipe

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Airtight container - I much prefer the click-shut lids on these containers compared to others.

    They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Ingredients

    Makes 1-2 portions

    • 1 medium baking potato

    • 2 tablespoons olive oil

    • 1/4 teaspoon garlic granules

    • Grind of black pepper

    • 1 teaspoon cornflour

    Instructions

    • Start by preheating your oven to 180C or 350F. Prepare a baking tray with parchment paper.

    • Wash the baking potato, and cut the potato length ways into approx 0.5cm-1cm discs. Depends on the size of your potato.

    • Take a disc, lay it flat and cut into approx 0.5cm wedges. Repeat with all the potato discs.

    • Pop the wedges into a large bowl and add in the olive oil, garlic, black pepper and cornflour (cornstarch). Give everything a good stir.

    • Spread out the wedges onto the baking sheet, and place into the oven for 50-55 minutes. Turn the wedges twice if you can, until golden brown.

    • Leave to cool slightly before serving to your baby.

    Recipe notes

    You can leave out the cornflour if you would like, this gives the wedges a little crunch on the outside.

    They are still great from 6 months old, but if you did not want an extra crunch on the potato wedges you can leave this step out.
