Ingredient information
Beetroot - This is a great ingredient to use in pancakes and a great way to get your little one to try beetroot without getting really messy stained hands.
Banana - I have added banana to add sweetness to the pancakes. If your little one cannot have banana you can always sweeten with cooked apple instead.
Milk - I have used whole milk but you could use semi skimmed milk or a plant based alternative such as oat milk or almond milk.
Flour - I have used plain flour but you can use an out flour, buckwheat flour, whole wheat flour or gluten-free flour for gluten free babies.
Egg - Eggs are needed in healthy pancakes to help bind the ingredients together I have used 2 free range medium eggs.
Cinnamon - I have added a little cinnamon for extra flavour, this is a great spice for adding flavour and great to use within baby led weaning recipes.
Butter - I have used unsalted butter but you can use olive oil, coconut oil, avocado oil, or a dairy free unsalted butter instead.
Serving suggestion
The easy beet pancakes would be great served with a dollop of plain Greek yogurt and chopped fresh berries such as strawberries and blackberries.
The healthy pancakes make for a great snack too or as part of a lunch box.

Storage instructions
The good news is that these pink beet pancakes can be frozen for up to 3 months in the freezer if you have any leftover pancakes. They can be stored in a freezer bag or a an airtight container.
To store in the airtight container the best way to do this is layer the pancakes in between parchment paper. You could also store in individual small airtight containers if this is easier.
If you are storing in the fridge they can be kept in an airtight container for up to 5 days.
To defrost and reheat, what you will need to do, is take out the pancake from the freezer and place in the fridge overnight to fully thaw.
Once thawed they can be enjoyed cold, or you can reheat in the oven on 180C or 350F for 5 minutes.
Check that they are hot all the way through, and leave to cool at an acceptable temperature for your baby.

Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

Instructions
- Pop all of the ingredients into a food processor or Nutri bullet and blitz the ingredients until smooth.
- Heat the knob of butter in a large frying pan on a medium heat, pour in the pancake batter to the frying pan to make a small to medium round pancake. Turn the heat down to a medium-low heat.
- You can cook more than one at a time depending the size of your frying pan.
- Cook the pancake for 1 minute, once you see air bubbles forming flip over and cook for 1 minute on the other side.
- Repeat with the remaining batter until you have used up all of your pancake batter.
- Leave to cool before you serve to your baby.
Notes
You can easily make the pink pancakes gluten-free by switching the flour to an oat flour or a gluten-free plain flour.
To make the recipe dairy free, switch out the milk for a dairy free alternative such as oat milk and unsalted butter for a dairy free alternative.
