    When introducing gluten-free flour, it is essential to ensure that they are from other flours s to avoid cross-contamination with gluten-containing grains.

    Ingredient information

    Cauliflower - Packed with nutrients, this makes a great veggie to be disguised in a pizza base. You can blitz the cauliflower once cooked in a food processor if you preferred a smooth pizza base.

    Self raising flour - I have used a GF flour for this recipe. You can also use almond flour or a GF oat flour too. Great for a gluten-free diet.

    Greek yogurt - I have used full fat Greek yogurt for the recipe to add a creaminess to the dough.

    Cheddar cheese - I have used cheddar cheese but you can use mozzarella cheese or red Leicester cheese, with toppings of your choice.

    Tomato puree - I have used a little tomato puree to the pizza bases to make a yummy tomato base to the pizzas. You can use a pizza sauce if you prefer. I like to use tomato puree for a small pizza so I do not waste a whole jar of sauce.

    Serving suggestion

    You could serve the homemade mini pizzas with broccoli or cucumber, and you could make a tomato sauce for the pizzas to dip. It is such an easy recipe to whip up or great for a healthy snack or party snack.

    If you wanted to serve the gluten-free mini pizza recipe on their own too that would also be just as yummy, it really is a great recipe on its own. The great thing is the recipe can be easily customised too.

    Storage instructions

    The pizzas can be stored in the fridge for up to 3 days for next time, stored in an airtight container.

    If you wanted to freeze the pizzas, you will need to make sure that the pizzas have cooled down before transferring to either a freezer bag or airtight container. Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.

    To defrost the pizzas, leave in the fridge overnight and make sure that they are fully defrosted, before re heating.

    To reheat, place the pizzas in a oven proof dish and reheat 180C/350F for 4-5 minutes. They can be eaten at room temperature.

    Once the pizzas have been defrosted you will not be able to reheat or refreeze.


    Equipment used to help with this recipe

    Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    This is a great recipe for gluten-free babies, also a great recipe if you wanted to add a hidden veg to a meal.

    Ingredients

    1. For best results start by preheating your oven to 200C or 392F. Prepare a baking tray with parchment paper or non-stick foil and set aside.
    2. Add the cooked cauliflower to a large bowl and mash with a potato masher. You can blitz the cauliflower in a food processor if you prefer a smooth texture.
    3. Add the yogurt and flour to the bowl and mix together using a spoon. Bring the mixture together using your hands to form a dough. This is your gluten-free pizza dough.
    4. Flour your work surface with a little flour and take approx 1 tablespoon of the dough and place on the floured work surface and push down using your fingers until you have a mini flat pizza base, place on the baking sheet. Repeat until you have used all of the dough, the recipe makes 8 mini pizzas. You could roll out the dough and use a cookie cutter to make the round pizza bases too.
    5. Spread 1/2 a teaspoon of the tomato puree on each of the pizza bases using the back of a spoon and sprinkle with the cheese.
    6. Pop into the oven for 25 minutes until the dough is cooked and the cheese has melted to a golden brown colour.

    Notes

    It is really easy to make the tasty gluten-free pizza recipe dairy free and vegan for a quick lunch.

    The best way to do this is to replace the cheddar cheese with a dairy free alternative and replace the Greek yogurt with a dairy free or vegan alternative to make individual servings of pizza.

    You can also add other toppings such as cooked shredded chicken, tomato or grated carrot or courgette.

    You could use regular flour too if you like, the recipe will work with all flours such as plain flour, self raising flour and even oat flour.
