Strawberries - I have used fresh strawberries for this recipe, you can use any fresh berries of choice, such as blackberries, blueberries or raspberries. You can also add in a little lemon juice for extra flavour or vanilla extract if your baby is over 1 years old.
Double cream - I have used double cream, but you can use whipping cream too if you have that. You can use pre made whipped cream too if you like and spoon the cream cheese into the whipped cream and mix together.
Cream cheese - I have used a full fat cream cheese as this has more flavour within the recipe. Plus full fat is great for babies up until 2 years old. You could use blitzed cottage cheese or Greek yogurt instead of the cream cheese for this delicious cheesecake recipe.
Serving suggestion
This simple cheesecake recipe will be great served with an oaty bar or ricotta cookie. Great for special occasions.
You can of course serve this no bake recipe on its own as a stand alone dessert or snack.

Storage instructions
For best results the cheesecake pot can be eaten straight away. The pot can be kept in the fridge for 3 days. The cheesecake can be eaten at room temperature too.
Best eaten on the day. The creamy mixture and mashed strawberries can be left in the pots or transferred to an airtight container for larger doubled up portions if preferred.
The pot can be frozen in the jar if needed, the recipe would make a great ice cream too!
You can leave them in the fridge overnight to thaw, once thawed they will be ok for up to 2 days in the fridge.
Once thawed from the freezer they will not be able to be refreezed.

- Start by mashing the strawberries in a separate bowl and set aside.
- Pour the cream in a medium mixing bowl or large mixing bowl followed by the softened cream cheese.
- Mix together using a whisk until thick and creamy, and you see stiff peaks. You can use a hand mixer if you prefer on a medium speed.
- Spoon the cream cheese mixture into a jar or small bowl followed by the mashed strawberries.
- Garnish with 1 fresh strawberry on top if you like.
Notes
You can make the 3 ingredient cheesecake suitable for vegan diets and dairy free diets by using a dairy double cream and dairy free cream cheese.
You can use other berries such as blueberries or blackberries instead. You can basically customise this recipe with any fruit of your choice, thats easily mashable or pureed.
