    Eggs on a sheet pan for baby is an excellent baby-led weaning (BLW) recipe for babies from six months old, as they are a nutritious, versatile, and easy-to-prepare meal option using simple ingredients. Great for breakfast time, lunchtime or dinnertime with minimal effort required.

    The gentle baking process ensures that the eggs are cooked thoroughly, making them a soft texture that is manageable for little hands to grasp and chew.

    You can enhance the dish with vegetables, such as fresh spinach or cooked red onion/white onion and sweetcorn, introducing a variety of flavours and nutrients while encouraging your baby to explore different tastes.

    Scrambled eggs can be cooked softly to make fluffy eggs, cut into manageable pieces, and served for easy grasping.

    Hard-boiled eggs are another great way to serve eggs to baby; simply cut them into quarters or slices to make them more accessible.

    You can also offer baked eggs or poached eggs, ensuring they are cooked through and tender to make a really easy meal.

    For a fun twist, try making a frittata with finely chopped vegetables, cutting it into small wedges for your baby to explore. Always ensure that eggs are cooked thoroughly to reduce the risk of any illness. This is a great recipe for baby and family.

    Ingredient information

    Butter - I have used a little unsalted butter to grease the sheet pan, you could use olive oil instead to make the recipe vegan and dairy free.

    Fresh eggs - I have used free range eggs for this recipe. Feel free to double up the recipe to make a bigger sheet pan recipe.

    Sweetcorn and peas - Frozen veggies are great to have in the freezer at all times. They can be used for a variety of recipes.

    Mozzarella - A great ingredient to use instead of cheddar cheese. Mozzarella is a really mild cheese so great to use for baby recipes.

    Italian seasoning - I have used a little Italian seasoning, you could use mixed herbs or oregano instead.

    Serving suggestion

    The sheet pan eggs recipe would be great served as part of a lunch with cucumber and extra grated cheese.

    The eggs can be a great lunch or snack on the go too.

    Storage instructions

    The easy sheet pan eggs can be kept in the fridge in air-tight container, a freezer-bag or you can wrap tightly with plastic wrap for up to 3 days in the fridge. Or you can freeze the eggs in freezer-safe bags or an airtight container for up to 3 months. Which is great as you will always have a lunch, dinner or snack in the freezer ready to be defrosted for a quick meal or snack.

    If you want to defrost the best way to do this is to take the eggs out of the freezer, and leave in the fridge overnight until fully thawed.

    The eggs are best eaten chilled, as they do not reheat too well, If you want to reheat you will need to heat in the oven on 180C or 350F for 5 minutes.

    Once reheated the eggs will not be able to be frozen again.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Quarter sheet pan - Stainless steel ovenware trays that are dishwasher safe and ideal for baking cookies, roasting vegetables, cakes, pies and pizzas. The list is endless!

    Large sheet pan - A larger version of the quarter sheet pan. Ideal for all your baking needs!

    This is a great recipe for breakfast, lunch or dinner. It is a great recipe for batch cooking too.

    Ingredients

    Instructions

    1. Preheat your oven to 180C or 350F.
    2. I used a small sheet pan for this recipe. Use the unsalted butter to grease the sheet pan. Make sure you use all the butter as you do not want the eggs to stick to the pan.
    3. Place the peas and sweetcorn in a small microwavable dish and add a splash of water. Cook in the microwave for 60 seconds.
    4. Drain the peas and sweetcorn from any excess water and mash the veggies using a fork.
    5. Sprinkle the veggies evenly onto the sheet pan.
    6. Add the Italian seasoning to the beaten egg and mix together,
    7. Pour the eggs onto the sheet pan and make sure it is covering the sheet pan evenly. You can add a grind of black pepper if you like.
    8. Sprinkle the mozzarella cheese over the egg mixture and pop into your preheated oven for 15-20 minutes until golden brown.
    9. Once cooled cut into 8-10 egg slices for the perfect size for baby.
    10. Leave to cool before serving to your baby.

    Notes

    To make this delicious meal dairy free, you will need to choose a dairy free/plant based cheese of your choice, or you can leave this ingredient out altogether.
