    Cheese and cottage cheese are both dairy products and suitable from 6 months of age, but they differ in their ingredients and production processes. With no added sugar regular cheese is made by curdling milk with the help of rennet, then ageing and pressing the curds to form a solid block. It comes in a variety of types, textures, and flavours depending on the type of milk used and the ageing process.

    Cottage cheese, on the other hand, is made by curdling milk with an acid like vinegar or lemon juice. It has a more lumpy and moist texture compared to regular cheese and is known for its mild taste. Cottage cheese is often lower in fat and calories compared to traditional cheese, making it a popular choice for those looking for a lighter dairy option, a good option for babies, toddlers and the whole family. Full-fat cottage cheese is advised from 6 months of age until 2 years of age.

    This cottage cheese flat bread only requires two simple ingredients and is a great way to prepare a quick bread recipe for baby-led weaning. A great alternative to a slice of bread and perfect for little hands! Combine self-raising flour with cottage cheese to form a dough, then roll it out and cook it on a griddle or frying pan until golden brown and cooked through.

    Ingredient information

    Full-fat cottage cheese - Cottage cheese is great for babies and such a nutritious food. A great alternative to cream cheese, cheddar cheese and a plain Greek yogurt. Such a versatile ingredient that works so nicely in this bread recipe. High protein too!

    Flour - I have used self raising flour, you could use a plain flour and a little baking powder too if you wanted. You could add a sprinkling of garlic powder too if you like.

    Serving suggestion

    The 2 ingredient cottage cheese bread would be great served with a dip such as a butter bean dip or a hummus style recipe.

    You could also use the bread as a wrap, if you roll the dough out thinly enough. You could fill with yummy hummus and grated carrot, whole eggs mashed or grated mozzarella cheese and grated cucumber. Perfect for that fussy eater.

    Storage instructions

    If you wanted to make the dough ahead of the game, which will not take you long at all you absolutely could and freeze the dough in a ball, all you will need to do is wrap the dough in a couple of layered of cling film (plastic wrap), pop in a freezer bag or wrap with tin foil and freeze for up to 3 months.

    When you decide to use the dough, leave the dough in the fridge over night and follow the recipe as per the instructions. You will not be able to freeze the dough again if you choose to make the bread this way.

    If you wanted to make the bread, you can store in the fridge for up to 5 days in an airtight container or freezer bag.

    You can freeze the bread cooked on the day, once it’s left to cool at room temperature within 2 hours. Store in airtight freezer bags or airtight containers. Use within 3 months. Thaw the frozen bread overnight and they will be ready to eat the next day.

    To reheat the bread cook on the hob in a frying pan for 2 minutes each side.

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    A great 2 ingredient cottage cheese bread recipe that can be used to dip or to wrap or to snack!

    Ingredients

    Instructions

    1. Place the cottage cheese into a large bowl. Sieve the self raising flour into the bowl and mix together using a spoon.
    2. Bring the mixture together using your hands, until combined.
    3. Flour a work surface and place the dough onto the flour. Cut the dough into 4 pieces.
    4. Take one piece of the dough and press down using your hands and using a rolling pin roll out the dough until approx 2-3mm deep. Repeat with the other pieces of dough.
    5. Take a frying pan and turn up the heat until the pan is nice and hot. (you could add a little coconut oil if preferred)
    6. place 1 piece of the rolled dough into the frying pan and cook for 2-3 minutes on each side.
    7. Repeat until all pieces of dough are cooked until golden brown.

    Notes

    You could make the recipe gluten-free by using a gluten-free self raising flour.

    You could use a dairy free plain yogurt if you wanted to make the recipe vegan/dairy free.

    Feel free to add in some favourites such as grated carrot, grated courgette or grated beetroot.
